Clos de Tsampéhro Brut VII
GENÈSE
Composed of Chardonnay for its fine, elegant bouquet, Pinot Noir for its structure and aromas of red berries, and Petite Arvine for its dynamism and originality.
DESIGN
Hand-harvested in crates, gently pressed (maximum 1.2 bar) in whole bunches. Fractionation of the press juice to retain only the core of the must with the most delicate aromas and the most elegant acidity. Alcoholic fermentation of the clear wine in truncated oak vats. Partial malolactic fermentation depending on the grape variety and vintage. Racking and foaming in the bottle using the traditional method. Aged on laths for a minimum of 44 months. No dosage at disgorgement to obtain a "brut nature" sparkling wine.
EVOLUTION
The three blended grape varieties offer good ageing potential, particularly after the sparkling period. Once disgorged, the wine will be at its best after 3 to 4 years in bottle. Thanks to its four years' ageing on laths, this Brut has a fine, creamy mousse.
